It's the holidays - people are on vacation or just too busy
for mail. :)
I think I'm going to have to get a dutch oven and make the
beans with the ribs in some serious all-day cookathon action soon.

Hi guys,
I'm happy to be in one group and all. This question really isn't for
tonight. (I'm gonna be watching fireworks, anyway :-)). BUT, next
week is not only Good Eats #50, but I'm sure that we'll have a chat
after it airs.
My question is basically: which chat room? The Club chatroom, or this
group's chat room?
Mikemenn? Bflat? Anyone? Anyone? Bueller?
just curious.

I'll be happy to help....I volunteered over on the old place to help you out. I'll take care of the calendar and the recipes (probably after each episode or something)

Well, the poll closed over at the Good_Eats Group and this group is the winner. I've already closed the Good_Eats group and unsubscribed everyone. Hopefully everyone will migrate over here.
Here are some thoughts:
If you're going to add a File, please place it in an existing or new folder to help keep everything neat. The same goes for bookmarks. You'll notice the database is full of receipes. My thought was that we'd have a database for each recipe then folks could give their thoughts, changes, and problems or like and dislikes about each one. All of the recipes are not there. Would someone like to add the rest? Too bad we can't put them in folders to keep that area from being so congested. Feel free to add polls if you want to know what people think. I also need a volunteer to keep the calendar up to date on when the episodes will air. I do it over at the Club but need someone here to do it. Anyone?
So, happy posting, browsing and polling, folks! The Group is yours!

I see the good_eats group is no longer and we are being pushed into this gorup. Well no thanks. If I had wanted to join this group I would have done so to begin with.

I'm STILL looking for some gourmet store...if for nothing else I want some purple potatoes :) You would think Denver would have some good places though.
As far as hams go, I have to admit that I regularly get the el cheapo spiral sliced hams most of the stores have their own brand of. I just toss it in the oven and then we have stuff for sandwiches and omelettes for awhile. I haven't felt the urge to do a major ham project, even with AB's inspiration.

My grandma always made a "7 bone roast" and that's what she keeps telling me to get, but I never see it in stores. I know it's not labeled that way, but I always thought it meant it had 7 bones :) NOW I know what to look for. Except, I went to one store and all they had was boneless *sigh*
Face it Jewel, we have crap grocery stores around here. We don't even have the real hams...the big hams in the grocery stores around here are the ham and water product with like 20% water.:-(

I must say I think this was the funniest episode I've seen to date! Excellent acting and writing by both Alton and "Chuck"! And the info on the different cuts of roast was perfect, I can't wait to try out that recipe!

W is a characeter and not an expert. She's an actress hired by Good
Eats to portray an expert.

funnily enough, I was thinking that just the other day (I
bought her book as a Bday gift for a friend). I figured it would keep
her off Good Eats, which would be bad.

Shirley isn't a character so I really don't think she should be
listed. We could make another poll about who is our favorite expert:
Shirley, Dunchon, that CDC chick, etc.

Being rather new to Good Eats and having only seen a handful of
shows, I can't really answer any of the poll questions. I'm not even
sure I could tell you which is my favorite of the ones I have seen,
but probably the Chocolate Chip Cookie one.
Am I the only one new to the show?

Here I am..did I beat Scav here? <g>
Well I did the chicken once, and it actually came out pretty good. I
got frustrated trying to keep the temp though. I have a chicken
frying pan that is less than great. It's warped so it's high in the
center, and it's not very heavy so it's hard to regulate. I also
tried a different (cheap) temp probe, and it wasn't real accurate.
All in all, the taste was good, but I'm holding out for an electric
skillet now before I try again.
BTW...speaking of Electric Skillets, I really would like one of the
ones like Grandma had that is all metal, top and bottom, but I can't
seem to find one...suggestions?? Lacking that, recommendations for
another good one?
I made my second attempt at Angel Food Cake today too (the first two
fell out of the pan for those who haven't seen my posts) This one
didn't fall out of the pan, but it did fall in general..it's sort of
lopsided. I am sure I didn't overbeat the eggwhites, if anything
they were underbeated..would that cause the problem? Also, I am in
Denver, so would there be some adjustments on altitude? I've been
told yes and no by different people..so I thought I would ask you
experts.
Thanks again Mike for all your hard work...

How about a nice flame war? Just kidding...
I have been playing with the fried chicken recipe recently, and finally
got it on the third iteration. My problem was not watching the temperature
on the fat. It was getting too hot, and the outside was a little darker
than I would like. My wife's position was less charitable: she said it was
burnt.
I had another go last night and kept a much better eye on the oil
temperature, thanks to my new digital probe thermometer (an early father's
day gift). Purely by coinicidence, it is the same make and model as Alton
sues on the show. She also bought me a conical measuring cup like Alton
uses; that *was* a bit of pathetic fandom.
